Thornton, a native of Omaha, and his girlfriend, Megan Arter, said they want to build connections, promote the Albion Country Club business, and enjoy the slower paced life of a small town.
Scott and Megan have worked in the restaurant industry all of their lives in the city; it’s all they’ve ever done. Scott has worked within the industry since he was 15 years old and has continued to pursue his passion for over 35 years, working in every aspect of a restaurant — the front house, kitchen, catering, bars, and much more.
Before coming to Albion, Thornton was general manager of J. Coco, Omaha, for almost 10 years, with Megan as assistant manager.
